- 6 oz Boneless skinless chicken thighs
- 2 tbsp Olive oil
- 2 large Zucchini
- 2 tbsp Butter (melted)
- 1 cup Broccoli florets
- 2 tbsp Sour cream
- 2 tbsp Chives (chopped)
- To taste Salt and pepper
- 1 cup Cheddar cheese
Preheat the oven to 400.
In a medium skillet heat olive oil over medium heat. Chop the chicken into half inch cubes and place in the skillet, fry until cooked through. Set aside.
Cut the zucchinis in half length wise. Hollow the zucchini by removing the seeds.
Pour the melted butter evenly over the hollowed zucchini. Place the zucchini on a baking sheet and cook for 20 minutes.
Meanwhile, combine the cooked chicken, broccoli, sour cream and salt and pepper in a bowl.
Remove the zucchini from the oven. Fill the zucchini with the chicken and broccoli mixture. Top with shredded cheese. Cook for 10 minutes.
Garnish with chopped chives, serve and enjoy!
