- 1-500g box Spaghetti
- 3 tbsp Olive oil
- 1 large clove Garlic (minced)
- 340 g Cherry tomatoes
- 1 tbsp Fresh parsley (chopped)
- 1 Red chili pepper (diced)
- To taste Salt
- 1/4 cup Parmesan cheese (finely grated)
Heat olive oil in a saucepan over medium heat.
Add garlic and saute for 2-3 minutes.
Add cherry tomatoes and cook until they burst and begin to breakdown (around 15 minutes).
Meanwhile, cook the spaghetti according to package instructions.
Add parsley and red chili pepper to the cherry tomatoes sauce and stir. Cook for an additional 5-10 minutes.
Add salt to taste.
Drain the spaghetti and toss in the sauce.
Serve the pasta topped with grated parmesan cheese.
