- 1-500g box Spaghetti
- 2 tbsp Olive oil
- 1 large Onion
- 200g Bacon or pancetta (chopped)
- 3 Eggs
- 1 cup Parmesan (finely grated)
- To taste Pepper
Slice the onion into thin rings then cut the rings half.
Heat olive oil in a medium saucepan on medium heat.
Add onions and cook until translucent, about 8-10 minutes.
Add bacon or pancetta and cook until the fat is rendered, about 10-12 minutes.
Meanwhile, bring a large pot of salted water to a boil and cook spaghetti according to package directions.
In a small bowl, whisk the eggs and set aside.
Drain the pasta and return to the pot. Add olive oil/bacon mixture and toss until combined.
Add some of the spaghetti to the bowl of eggs to increase the temperature then pour the eggs into the pot of pasta and mix until fully combined.
Add the parmesan and mix until combined.
Serve pasta and top with pepper to taste.
