Peanut Butter Cupcakes with Chocolate Peanut Butter Frosting

  • 1 box Yellow cake mix
  • 1 1/4 cup Water
  • 1/3 cup Canola or vegetable oil
  • 1/2 cup Creamy/smooth peanut butter
  • 3 Eggs
  • 3/4 cup Butter (softened)
  • 3/4 cup Smooth/creamy peanut butter
  • 4 cups Icing sugar
  • 1/4 cup Cocoa powder
  • 1/4 cup Whole milk or cream

For the cupcakes:
Preheat oven to 350.

Add cake mix, water, oil, 1/2 cup of peanut butter and eggs in a mixing bowl. Beat on low for 20 seconds then beat on medium speed for 2 minutes.

Line cupcake pan with cupcake liners. Fill the cupcake liners just over half full. Bake for 15-20 minutes or until an inserted toothpick comes out clean.

For the frosting:
Place butter, remaining peanut butter, icing sugar, cocoa and milk/cream in a large mixing bowl. Blend on low speed until incorporated then blend on medium speed until smooth.

Frost cooled cupcakes, serve and enjoy!
