- 1 large head Cauliflower
- 1/4 cup Heavy cream
- 1 tbsp Butter
- 1 tsp Oregano
- 10 slices Pepperoni
- 1 cup Mozzarella (shredded)
- 1/2 tsp (or to taste) Salt
Preheat oven to 400
Clean cauliflower and cut or break into medium chunks.
Place cauliflower, cream an butter in a microwave safe bow and microwave for 10 minutes.
Carefully remove the bowl (it may be hot) and toss or stir the cauliflower. Microwave for another 5 minutes.
Transfer cauliflower to a food processor and puree until smooth.
Add half of the cheese, half the pepperoni, oregano and salt to the puree and stir until combines.
Place the puree mixture into an 8×10 baking dish. Top with the remaining cheese and pepperoni.
Bake for 15 minutes or until cheese is golden and bubbly.
