Dijon and Pine Nut Salad

  • 8 cups Mixed greens
  • 4 tbsp Pine Nuts
  • 1 tbsp Red wine vinegar
  • 2 tsp Dijon mustard
  • 1 clove (minced) Garlic
  • To taste Salt and pepper
  • 4 tbsp Olive Oil
  • 6 oz Blue cheese (crumbled)

Rinse and spin the greens. Place in a large bowl.

In a small dish whisk vinegar, dijon mustard, garlic, salt and pepper. Slowly add olive oil and whisk well until combined.

Add the pine nuts and dressing to the mixed greens and toss.

Top with crumbled blue cheese, serve and enjoy!
