  • 4 fillets Sole (fresh or frozen)
  • 3/4 cup Flour
  • 2 tsp Baking powder
  • 3/4 tsp Salt
  • 1 cup Water
  • 1 cup Vegetable or Canola oil

Pat the fish with a paper towel to remove any moisture, set aside.

Heat the oil in a medium saucepan on med-high heat.

Combine the flour, baking powder, salt and water and whisk until smooth.

Coat the fish and place in the hot oil, cook 2 pieces at a time. Cook for 5-6 minutes then flip the fish and cook for an additional 5 minutes or until lightly golden and crispy.

Serve fish with a drizzle of white vinegar (optional) and a side of chips!
