- 4 Large eggs
- 1/2 Ripe avocado
- 2 tbsp Soft goat cheese
- 1 pinch Paprika
- 1 pinch Sea salt
- 1 pinch Pepper
In a small pot bring water to a simmering boil.
Carefully place the eggs in the water and cook for 8-10 minutes.
Place eggs in ice water until cooled completely, around 5 minutes.
In a medium bowl mash the avocado until smooth then stir in the goat cheese until fully incorporated.
Peel and cut the eggs in half lengthwise and scoop out the yolks and put the yolks in the avocado mixture. Mash and stir until combined.
Place the yolk mixture evenly amongst the egg whites. Sprinkle with salt, pepper and paprika. Serve and enjoy!
